Coconut oil roasted vegetables: Preheat your oven to 400 degrees F and toss your favorite vegetables (such as diced sweet potatoes, carrots, and red onion) with melted coconut oil and a pinch of salt. Roast in the oven until the vegetables are tender and slightly caramelized, about 25-30 minutes.
Coconut oil granola: In a large mixing bowl, combine 3 cups of rolled oats, 1/2 cup of chopped nuts (such as almonds or walnuts), 1/4 cup of shredded coconut, and 1/4 cup of melted coconut oil.
