Ingredients:

  • 1/2 cup Dignity Coconuts raw coconut oil, not melted
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix the wet ingredients: In a stand mixer with the paddle attachment, combine Dignity Coconuts’ raw coconut oil and both sugars. Mix until well combined, about 1-2 minutes.
  3. Add vanilla and egg: Incorporate the vanilla extract and egg into the mixture, ensuring everything is well combined. Scrape the sides of the bowl as needed.
  4. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture in two parts, mixing until just combined.
  6. Fold in the chocolate chips: Gently fold the chocolate chips into the dough.
  7. Bake: Drop spoonfuls of dough onto a baking sheet and bake for 10-12 minutes, or until the edges are golden brown.
