They are delicious, nutritious, and easy to meal-prep and store at the beginning of the week. Enjoy the added benefits of low sugar, complex carbs, healthy fats, and essential vitamins packed into these pancakes. Perfect for a quick, filling breakfast or a healthy snack throughout the week.

Pancakes that Pack a Punch (of Nutrients)

These banana oat pancakes are packed with whole ingredients that are easy to find and quick to prepare. Chances are, you probably already have most of these ingredients sitting in your pantry. The oats provide complex carbohydrates, which release energy slowly, keeping you full and energized throughout the morning. The banana adds natural sweetness, along with potassium, while the egg gives you protein to help build and repair muscles. Even the cinnamon will offer some added health benefits as it supports your immune system and regulates blood sugar. 

Our favorite part of the recipe is substituting your cooking spray with coconut oil! You don’t have to worry about your pancakes sticking to the pan or getting a weird aftertaste from other cooking oils. Cooking with coconut oil adds a hint of sweetness and extra vitamins. Ingredients:

  • 1 ripe banana 
  • 1 egg 
  • 1/4 cup rolled oats
  • 1/4 tsp cinnamon
  • 1/2 tsp baking powder
  • 1 tbsp flax seeds (optional)

Instructions:

  1. Mash the Banana: In a bowl, mash your ripe banana until smooth.

  2. Blend the Oats: Finely blend your rolled oats to create oat flour.

  3. Mix It All Together: Add the egg, baking powder, cinnamon, rolled oats, and flax seeds (optional) to the mashed banana. Whisk it all up until the ingredients are well combined.

  4. Prep Your Pan: Coat your pan with Dignity Coconut’s raw coconut oil. This not only prevents sticking but also adds a delicious flavor!

  5. Cook Your Pancakes: Set your heat to low/medium and cook until golden brown on both sides.
